Hello guys, anyone knows when Splunk 8.0 will be released (and therefore EOL Splunk 6) ?

Splunk does not publicize future release plans like that. Typically, EOL plans are communicated months in advance, with customer outreach, so it will not come as a surprise and you will have time to plan for it.
What will happen to our Windows 2003 server splunkforwarders version 6.2.3 & 6.5.2?
You need to upgrade them to 7.0 and then 8.0. See Upgrade paths to 8.0 in the Installation Manual. Windows 2003 is no longer a supported operating system, even for forwarders. See the System requirements.
Nothing will happen to them. They will continue to function, but are not supported by Splunk.
